Smoked Bacon, Feta and Spinach Salad . This tasty salad is nutritious, quick and easy to make, and low in carbs.
INGREDIENTS
8 oz. baby spinach
250g Smoked bacon
2 T balsamic vinegar & olive oil
1/2 tsp. garlic minced
1/2 cup Feta cheese crumbled
INSTRUCTIONS
Cut bacon into short strips and cook in a frying pan, until bacon is crisp plus minus 4 min if you use the smoke bacon of Taste of Africa
Lift out bacon on a plate with a paper towel to absorb the extra bacon fat.
Crumble Feta cheese and set aside.
Combine 2 T oil balsamic vinegar and minced garlic in the pan heat for a minute or so, until it's bubbling hot.
I used 8 ounces of organic baby spinach to make this side-dish salad for four people but you could increase the amount of spinach even more if you prefer more greens. Then toss the spinach with the hot dressing.
Ad your bacon and Feta Cheese, saving a bit of bacon and Feta for the top. Serve right away.
