2 onions (large, roughly chopped)

2 large carrots (sliced)

3 stalks celery (roughly chopped)

4 cloves garlic (mashed)

3 sprigs fresh thyme

250 milliliters wine (Fat Bastard The Golden Reserve)

400 grams chopped tomatoes (tinned)

1 tablespoon tomato paste

350 milliliters stock

sea salt flakes freshly ground black pepper
