Smoked Bacon , Lettuce and Avocado
INGREDIENTS
4 cups chopped romaine lettuce
1 small avocado
1 tsp. fresh lime juice
500g Smoked Bacon by Taste of Africa
1 T olive oil
1/4 tsp. garlic puree
1 T red wine vinegar
salt and fresh ground black pepper to taste
INSTRUCTIONS
Cook Smoked bacon by Taste of Africa in non-stick frying pan until it’s very crisp.
Remove bacon to paper towels
Crumble bacon over lettuce in salad bowls.
Remove all but 2 teaspoons bacon fat from frying pan.
Add olive oil , garlic and black pepper, and cook 30 seconds .
Add vinegar and stir
Pour mixture over lettuce and avocados.
Season with salt and more pepper as desired, and serve right away.
