INGREDIENTS
5- 7 lb Pork Rib Roast (I used 8 bone roast)
2-3 tbsp dried rosemary
1-2 tbsp kosher salt
fresh ground pepper
HOW TO COOK PORK
Start by bringing the meat to room temperature for 30 minutes.
Preheat the oven to 400º F
Mix seasonings together in a small bowl. Generously rub the seasoning into the meat
Place meat fat side up in a roasting pan that has a rack.
Roast uncovered for 15 minutes until a golden-brown crust forms. Roasting the pork at a high temperature for a short period sears the meat and seals it to keep all the juices inside.
Reduce the heat to 325 ºF and continue to roast uncovered for about 1 and a half to 2 hours. This will vary depending on the size.
Remove pan from oven and place on cutting board. Let rest for 10 minutes before slicing. This keeps all those tenderizing juices inside .
