Frankfurters or Wieners with eggs

Ingredients

  • 500g Frankfurters or Wieners

  • 410g (1 tin) chopped tomatoes

  • 125 ml (½ C) leeks, chopped

  • 1 lemon

  • 5 ml (1 t) nutmeg

  • 4 eggs

  • olive oil for cooking

  • salt & pepper to taste

  • 60 ml (¼ C) sour cream for serving Method

  • In a frying pan over moderate heat, fry the leeks and cumin seeds in olive oil for 3 minutes.

  • Add the zest and juice of 1 lemon.

  • Add the tinned tomatoes and simmer until it starts to bubble.

  • Break eggs into the pan and cook for 2 minutes.

  • In a separate pan over moderate heat, fry the Frankfurters or Wieners in 2 tablespoons of oil for 5 minutes. @tasty home foodies
