Ingredients
500g Frankfurters or Wieners
410g (1 tin) chopped tomatoes
125 ml (½ C) leeks, chopped
1 lemon
5 ml (1 t) nutmeg
4 eggs
olive oil for cooking
salt & pepper to taste
60 ml (¼ C) sour cream for serving Method
In a frying pan over moderate heat, fry the leeks and cumin seeds in olive oil for 3 minutes.
Add the zest and juice of 1 lemon.
Add the tinned tomatoes and simmer until it starts to bubble.
Break eggs into the pan and cook for 2 minutes.
In a separate pan over moderate heat, fry the Frankfurters or Wieners in 2 tablespoons of oil for 5 minutes. @tasty home foodies
