Ingredients
Ribs
750 g Loin Ribs
250 ml (1 C) cake flour
30 ml (2 T) BBQ Spice
250 ml (1 C) water
Dip
125 ml (½ C) spring onion, chopped
2 large pickled jalapeños, chopped
2 granny smith apples, peeled and chopped
30 ml (2 T) olive oil
1 charred green pepper
salt and pepper to taste Method Ribs
Preheat oven to 200°C.
Wrap ribs in heavy-duty foil and place on a baking tray. Bake in the oven for 15 minutes.
Slice cooked ribs into individual riblets.
Combine flour, BBQ spice and water in a bowl to make a batter.
Dip ribs into batter and coat fully.
Deep fry until coating is golden.
Dip
Place spring onion, jalapeños and apples on a greased baking tray. Drizzle with olive oil and cook in the oven for 10 minutes (this can be done at the same time as the ribs).
Place cooked spring onion, jalapeños and apples in a food processor. Add charred green pepper and blend until smooth. Season to taste.
